Breakfast smoothie on the go

Most days for breakfast I am an eggs and bacon kind of girl.  Then there are the days that I have somewhere to be and need something quick.  I have a ninja blender and just throw the following ingredients into one of the single cups and blend away:

  • Ice
  • Almond milk (I use unsweetened vanilla)
  • 1 banana (I like to eat them with a little green on top, so this is a perfect use for them when they start to turn)
  • 1 Tbsp chia seeds
  • 1 Tbsp flaxseed meal
  • 1 Tbsp cacao powder
  • 1 Tbsp almond butter

I don’t actually measure the ice and almond milk, but it’s about 1 cup of the small ice cubes my fridge produces and 1/2-3/4 cup of almond milk, depending on how you like the consistency.  I add them in the order listed so that they don’t stick to the bottom.  The smoothie has some grainy texture due to the flaxseed and chia seed, but this doesn’t bother me and I think it tastes great!

  1. I am absolutely obsessed with smoothies. I’ve been eating better these last few weeks and smoothies are my go-to when I can’t think of anything else to eat. I am definitely trying this recipe tomorrow morning. It looks and sounds so tasty! I’ll probably add a little spinach to give it some extra punch.

    1. Smoothies are such a great go- to and I can usually pack some great healthy things into ones for my kids. Spinach sounds like a good add-in. I have a recipe for a mixed greens recipe that I really like. Almond butter seems to add that little bit of sweet that I need in a green drink!

      1. I’m going shopping today so I’ll have to remember to pick up some almond butter. Surprisingly I’ve never tried it! I meant to make this smoothie this morning, but forgot I didn’t have all the ingredients. Oops! So excited to try it tomorrow when I have all the right things.
